How to feed a 2 yr old?

I really don't know what to do with this kid. I think he gets about 300 calories/day. On a good day. It has been 4 months since he has eaten a vegetable. He refuses fresh fruit, meat, cheese, pasta, juice, beans, basically everything. If I ask him to try it, he says it will "make me cry".
This is what he will eat. Sometimes.
raisins
waffles/pancakes
cereal
popcorn (totally counts as a vegetable right?)
milk
Once he ate 4 bites of a hot dog- who would have guessed what feelings of joy I would get from a child of mine ingesting unidentifiable highly processed meat? I know you think I am exaggerating, but I'm not. What can I do? I never knew feeding issues were so stressful! Do you have any suggestions? Or recipes?
Help me, before he develops rickets or scurvy or some other such disease that normal children don't get.

Hey Jamie! It's Courtney Cooke...Carter is so beautiful! And yet he looks so different from Jackson and Max (also handsomely beautiful boys)

Have you tried the pureed veggies and fruits baked into stuff like pancakes? Some of those ideas really do work out (but not all of them). I've also resorted to powdered vitamins at times and mixed them into just about anything I could. Good luck! Hope you guys are all doing well.

ok, first of all, he looks big, so his diet must be doing something! And second, was this supposed to be a funny post, because I'm dying laughing. Maybe you could make food a reward. Like, just don't give him any. Ever. Then if he does something good, you can be like "good job Carter, here's a hamburger and french fries". And if he does something wrong, take his food away and feed it to Max.
And then drive down and visit me.

oh how I feel for you. Do you remember what we had to go through with Rio and Rylee? They had 5 foods that they would eat and then they slowly started to drop those. I remember the day they ate pizza for the first time. They were almost four years old. I was so happy I took a picture. I have no advice because you cannot force them to eat....we tried prying our kids mouths open and shoving it in..trust me..that doesn't work. They only thing that helped was time. As they got to be about 3 they would slowly start to try new things. It was a slow and painful process, but at about 5 years old they had a huge variety of food and now they eat anything. Good luck!!

Oh Jamie....I need to call you and vent again...Sawyer is the EXACT same way!! I worry he will end up shrinking! It's seriously stressful and I try different things all the time and it never works! Do they just not care about food? Or is it too much time away from play and causing trouble?

Have you tried ensure? My niece has to drink that for vitamins and stuff because she wouldn't eat and her hair was falling out. I always add canned pumpkin to our pancakes and waffles....just dump some in there, he'll never know!

Alta ate an entire hot dog from Costco a week ago, talk about disgusting. But since she never eats meat I was really excited too. Apparently she's iron deficient. When the nurse told me this, I said "that doesn't surprise me, she never eats meat". The nurse then suggested to feed her more leafy greens. I laughed.
I miss you! I haven't talk to you in so so long.

Hi Jamie,
Courtney's mom here... have you tried smoothies? My grandkids love them! My daughter Lauren even has really cool smoothie cups with lids and straws and she loads the smoothies with great things.(rice milk, or almond milk, plain yogurt, banana, frz raspberries, blueberries, strawberries, basically any fruit) and when I recently took care of the kids and sneaked in fresh spinach and green beans and carrots and they still yummed it up. P.S. you may need a really good blender. good luck!

Starvation seems to be a good recipe for cuteness. Hope you're doing well!
